This is a PDO soft cheese, with a washed rind, produced from whole cow'smilk. The average weight of each wheel is about 2.2kg. Inspired by traditional processing, it is definitely a quality product, dedicated to gourmets and connoisseurs. The slightly shorter maturing period (40 days) which gives it a more delicate aroma. The appearance of mould on the surface is a natural characteristic of the product. Seasoning: minimum 35 days. Milk origin: Italy. Not edible rind.
